What exactly do people on the raw foods diet eat?

So many (healthy) foods have to be cooked to be eaten. Like sweet potatos (extremely healthy) and all that. I want to go on the raw foods diet but is it really that healthy? I mean I always eat organic and don’t ever eat canned or packaged foods but I still have to cook some of it, or else I wouldn’t get proper nutrition. Should I go on the raw foods diet? How would I do it?
